From the 連体形 (rentaikei, “attributive form”) of Early Middle Japanese adjective 美し (ishi), with the medial /-k-/ falling out. The ishii form appears in informal spoken use from roughly the 1200s-1300s, persisting through the Edo period.[2] In turn, the base form 美し (ishi) is first attested from the early 1200s.[3]
Speculatively, may be derived from or otherwise related to 良い (yoi) / 良い (ii, “good”). Compare what may be a similar "y" ↔ "i" alternation in pairs such as 夢 (ime) / 夢 (yume, “dream”), 稲 (ine, “rice plant”) / 米 (yone, “rice”).
The delicious sense appears to have grown out of 女房詞 (nyōbō kotoba, “woman's word”) usage from the late 1300s, when this word was used primarily by women to express that food was particularly "good". Feminine usage patterns also led to the inclusion of the honorific prefix お- (o-), leading to modern term 美味しい (oishii, “delicious”)[2][3][4] as a more polite synonym to うまい (umai, “delicious”).[5]
