From 牛(ぎゅう) (gyū, “ox”) + 耕(こう) (kō, “ploughing”) + 式(しき) (shiki, “style”), as a partial calque of Ancient Greek βουστροφηδόν (boustrophēdón), from βοῦς (boûs, “ox”) +‎ στροφή (strophḗ, “turning”) +‎ -ηδόν (-ēdón, adverbial suffix), in reference to the back-and-forth course traced by boustrophedon text resembling the path taken by an ox while ploughing a field.
