Metathesised from the original but now variant nisheste, from Ottoman Turkish نشاسته (nişaste, nişasta, starch), possibly with the same [a] > [e] as in the cognate Greek νισεστές (nisestés), ultimately from Persian نشاسته (nešâsta, nešâste).
