Literally, “not much soup”, with soeps representing a partitive form of soep, with the originally masculine and neuter genitive inflectional ending -s generalized here as a partitive ending and attached to the feminine noun soep by analogy - the true genitive of feminine nouns lacked this inflectional -s. Possibly influenced by niet veel zaaks.
