Etymology

Possibly borrowed from Spanish candinga (“food prepared with pieces of cooked and fried pork liver, onion, sweet chili pepper, tomato, annatto, and pepper”). Compare Central Bikol kandingga. See also Cuban Spanish gandinga (“dish consisting of stewing pork fritters or entrails with potatoes, tomato sauce, and spices”) which was said to be of African origin.
