Etymology

From 13th-century Middle High German lebekuoche. The second element is clearly Kuchen; the origin of the first element is uncertain: it might come from the same root as Laib (“loaf”), or from Latin libum (“flat bread”) (for the unexpected vowel, compare Middle High German lebezelte, which existed alongside the form with the expected vowel, libenzelte), though both theories present difficulties.
