Borrowed from Latin acerbās (literally “you are harshening, you are embittering; you are worsening”), second-person singular present active indicative inflection of acerbō (“to harshen, to embitter; to worsen”). Further from acerbus (“bitter, harsh”) and ultimately from Proto-Indo-European *h₂eḱ- (“sharp”).
