Unknown. Beekes suggests a possible Pre-Greek origin in view of the variant with a doubled -λλ-. Compare also other plant names that share the same prefix, such as βᾰλαύστῐον (bălaústĭon, flower of the pomegranate), βᾰλλωτή (băllōtḗ, black horehound) and βᾰ́λλῐς (bắllĭs, unknown kind of plant).
